What to do:
Sugar craving? Be ready with these 5-min chocolate crispy bites!
Why this step works:
Most people are aware that they need to weed sugar out of their diets, but actually doing, isn’t always that easy!
There are a few strategies that can really help. One which is particularly useful, especially in the early days, is to be ready with alternative options when pesky sugar cravings strike.
These truffle-sized little bites are great for this. It literally takes 5 mins (+ 15 mins in the fridge) to make a batch of 15. Make them in advance for a tasty, convenient, satisfying and much healthier solution in the moment. They contain hardly any refined sugar per bite, no artificial sweeteners or nasties, and lots of nutritious goodness too.
5 min chocolate-crispy bites
Makes 15 little bites
You will need:
¼ cup dessicated coconut
100g dark chocolate (AT LEAST 85% cocoa solids)
¼ cup sunflower seeds
¼ cup chopped walnuts
Himalayan pink sea salt (to taste)
1 teaspoon sunflower seeds
A little note on your dark chocolate
Checking the cocoa content of your dark chocolate is ABSOLUTELY KEY here because there’s massive variation in terms of what’s available. My recommendation is to go for AT LEAST 85% cocoa solids; any less than this and the sugar content of your little bites will still be too high. I used Lindt 85% dark chocolate for these.
Method:
- Break the dark chocolate into squares, place in a heatproof glass bowl and sit it carefully over a pan of simmering water. Once melted, remove from the heat.
- Add all the other ingredients (except sea salt & extra teaspoon mixed sunflower seeds) to the bowl and mix well.
- Place a layer of greaseproof paper on a rectangular baking tray and spoon out half a tablespoon at a time to create 15 individual little bites. Use the back of a teaspoon to tidy them up afterwards.
- Sprinkle with a pinch of sea salt and sunflower seeds then place the tray in the fridge and leave until your bites are set (about 15 mins). These keep well in an airtight container in the fridge, between layers of greaseproof paper.
Sugar cravings can be incredibly powerful and whilst there are lots of ways you can adapt your diet to prevent them from happening in the first place, being armed with alternative options like this, for those times when things haven’t quite gone to plan, can be very helpful too.
