Why this step works:

After a little half-term pause to take a breather and soak up the sunshine, Little Steps is back! And this warmer weather paves the way for summer salads. I’m a massive fan of salads; I think they’re a brilliant way to up your intake of different plant foods; they’re quick and easy to make, and they don’t need to be tasteless or boring; salads can be super tasty too!


In fact, there’s lots of easy ways to make a salad tasty AND nutritious, and this is a topic I’ll keep coming back to over the next few months. Let’s start with the easiest and simplest way to massively upgrade your salad. A great dressing.


Little Step No 23: Try this super-simple, super-tasty, power green salad dressing.


You will need:

  • ½ cup good quality olive oil

  • 1 tbsp apple cider vinegar OR red wine vinegar OR white wine vinegar

  • 1 tsp freshly squeezed lemon juice

  • ½ tsp Dijon mustard

  • ¼ clove chopped garlic (optional)

  • 1 cup chopped fresh mixed herbs (use any combination of your favourite fresh herbs)

  • ¼ teaspoon Himalayan rock salt

  • ¼ teaspoon freshly ground black pepper

What to do:

Add all ingredients to a food processor, (NutriBullet / Vitamix or similar), blend until thoroughly mixed. Store in a recycled glass jam jar in the fridge for up to 7 days.


Why I love this dressing:

1. It’s bright green and looks ace on your plate!

2. It’s packed full of the most incredible phytonutrients including:

- Immune-supportive vitamin C from the lemon juice

- Anti-microbial allicin from the garlic

- Antioxidant powerhouse carotenoids and immune-regulating flavonoids from the fresh herbs

3. You’ll get the most benefit from adding carotenoids into your diet when you eat them with fat. Hence why blending the carotenoid-rich herbs with oil is such a magical thing to do for your health.

4. Adding an oil-based dressing to your salad not only makes it tastier and more nutritious, but keeps you feeling fuller for longer too.

5. You can add different herbs every time, thus increasing the diversity of plant foods in your diet, which your gut microbiome will LOVE!

6. It's very, very easy to make a single batch like this that will keep you nourished with super salad goodness all week!
