Prep (garlic) like a pro!
Why this step works:
The last few weeks have been very busy in our house! And when time is stretched and we’re asking a lot of ourselves what we really need to do is UP our nutrition to support these increased needs. Ironically though, what can happen during times of stress is the exact opposite - healthy eating habits fall by the wayside and it's much easier to reach for the quick fixes instead.

It's all about taking small steps to build solid dietary foundations that will stand firm when the stormy weather comes.
Here’s a tiny little time-saving step that I have used lots over the last few weeks:
Prep (garlic) like a pro!
Many meals have garlic at the base – it's super-tasty and super-nutritious - a real win-win. Here's how to shorten your meal prep time by prepping garlic in bulk in advance.
You will need:
2 x Whole garlic bulbs
Olive oil
What to do:
Separate cloves from bulbs, peel & trim the ends. Add cloves to a food processor
For every 2 x garlic cloves, add 1 - 2 tbsp. olive oil to the food processor
Blend to puree the garlic with the oil
Pour the garlic & oil puree into an ice cube tray and place in the freezer
When frozen, remove the cubes from the tray and store in an airtight container/bag in the freezer until you need them (I use a knife to help get the cubes out of the tray as they can be a bit sticky - as you can see in the pic below!)
Hey presto! The next time you need crushed garlic, take as many cubes out of the freezer as you need (they thaw very quickly). Place into your pan and get cooking!
Over the last few weeks I've used these cubes as a base for casseroles and stir fries, thawed in salad dressings or popped on top of veg before roasting in the oven
I can’t promise ‘prepping your garlic like a pro’ is going to change your life overnight, but I absolutely can promise it’s another little step in the right direction. x
